These chocolates are loaded with healthy fats and protein derived from walnuts, almonds and coconut oil. One chocolate will satisfy your sweet tooth and two will curve your appetite.
- ½ cup organic virgin coconut oil
- 1 cup almond butter
- ½ cup Lily’s dark chocolate stevia sweeten pieces 55% cocoa (or 2 Tbs cocoa powder and stevia as sweetner)
- 1 teaspoon vanilla extract
- 24 walnuts or almonds (pieces)
- Fill a medium saucepan with 1 inch of water and bring to boil. Place another smaller saucepan on top or a metal bowl.
- Bring heat to low, add coconut oil, almond butter, chocolate pieces, vanilla extract and stir until everything is melted.
- Prepare a bite-size square silicone mold, 24-cavity for baking; or any baking dish lined with parchment paper.
- Place one piece of nut into each mold cavity. Carefully, pour chocolate mix into mold.
- Place in the freezer for 15 minutes to allow it to solidify.
- *Tip: I like to place a chopping board under the silicone mold to prevent bending while transferring to the freezer.
